Spicy Vegetable Rice

Ingredients:

  • 1 cup Normal rice
  • 2 medium Potatoes, diced
  • 1 medium Tomato, chopped
  • 2 Green Chillies, slit
  • 1 medium Carrot, grated
  • 2 cups leaves (spinach or any leafy greens)
  • 1 tsp Chilli powder
  • Salt to taste
  • 1 Lemon, juiced

Instructions:

  • Rinse the normal rice under cold water until the water runs clear, then soak it for 10 minutes.
  • In a pot, bring 2 cups of water to a boil and add the soaked rice. Cook for about 10 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
  • In a separate pan, heat a little oil on the stove top over medium heat.
  • Add the diced potatoes and sauté until they start to soften, about 5 minutes.
  • Add the chopped tomato, green chillies, grated carrot, and sauté for another 3 minutes until the vegetables are cooked.
  • Stir in the leaves and cook until wilted, about 2 minutes.
  • Add the cooked rice to the vegetable mixture, sprinkle with chilli powder and salt, and mix well to combine.
  • Remove from heat and squeeze fresh lemon juice over the top before serving.
