Ingredients:
- 1 cup Normal rice
- 2 medium Potatoes, diced
- 1 medium Tomato, chopped
- 2 Green Chillies, slit
- 1 medium Carrot, grated
- 2 cups leaves (spinach or any leafy greens)
- 1 tsp Chilli powder
- Salt to taste
- 1 Lemon, juiced

Instructions:
- Rinse the normal rice under cold water until the water runs clear, then soak it for 10 minutes.
- In a pot, bring 2 cups of water to a boil and add the soaked rice. Cook for about 10 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.
- In a separate pan, heat a little oil on the stove top over medium heat.
- Add the diced potatoes and sauté until they start to soften, about 5 minutes.
- Add the chopped tomato, green chillies, grated carrot, and sauté for another 3 minutes until the vegetables are cooked.
- Stir in the leaves and cook until wilted, about 2 minutes.
- Add the cooked rice to the vegetable mixture, sprinkle with chilli powder and salt, and mix well to combine.
- Remove from heat and squeeze fresh lemon juice over the top before serving.
